- 1 Tbsp sliced green onion
- 1/4 cup sharp cheddar, grated (for the base)
- 4 eggs
- 1 Tbsp milk
- Seasoned salt (such as Lawry’s), a pinch
- Smoked paprika, a pinch
- Salt and pepper, to taste
- 1 large tortilla (burrito-sized or matched to your pan)
- 1/4 cup sharp cheddar, grated (for the filling)
Instructions
- Chop the ham and slice the green onion.
- In a small bowl, whisk the eggs with milk, seasoned salt, smoked paprika, and a little black pepper.
- Heat a medium skillet over medium-high heat. Choose a pan about the same size as your tortilla.
- Lightly spray the pan with cooking spray. Sprinkle about half of the first 1/4 cup of grated cheddar into the skillet and let it crisp and brown at the edges.
