- 1 medium sweet potato, peeled and spiralized
- 1 medium beet, peeled and spiralized
- 1 small Granny Smith apple, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon ground turmeric
- 3 ounces fresh spinach
- 1 cup cooked quinoa
- 1 ripe avocado, halved and pitted
- 1/2 cup chickpeas (canned and rinsed or cooked)
- 2 teaspoons chia seeds
- 1/4 cup tahini
- 1 tablespoon apple cider vinegar
- 1 tablespoon water (more if needed to thin dressing)
- Zest and juice from 1 lemon
Instructions
- Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat. Add the spiralized sweet potato and the turmeric. Sauté, stirring occasionally, until the sweet potato is tender about 5–7 minutes. Transfer to a bowl and let cool slightly.
- Wipe the skillet clean or start a fresh pan. Add the remaining tablespoon of olive oil and the spiralized beet. Sauté the beet noodles for about 3–4 minutes until just softened but still slightly firm. Remove from heat and let cool.
