Danish grød – all the rage!

Last summer in Denmark we finally tried Grød, the restaurant that reinvented porridge as a contemporary meal. It’s easy to see why the concept caught on: bowls range from sweet to savory, often blurring the line between porridge and a full, restaurant-style grain bowl. We sampled a savory hoisin chicken bowl at Torvehallerne food market in Copenhagen. It didn’t feel like classic porridge, but it was hearty, balanced and full of flavor — a perfect example of why Danish grød has become so popular.

What is drømmekage?

Drømmekage literally means “dream cake.” It’s a classic Danish sheet cake with a soft vanilla base and a crunchy, caramelized coconut topping. That crisp, caramel-coconut layer makes the cake instantly nostalgic for many Danes. We were inspired to translate those exact textures and flavors into a breakfast bowl: creamy oats topped with vanilla yogurt and a caramelized puffed-rice-and-coconut crunch that echoes the cake’s topping.

If you enjoy experimenting with dessert flavors at breakfast, drømmekage is an ideal starting point. The goal is to capture the sweet-but-balanced flavor, the vanilla aroma, and most importantly the contrast between soft and crunchy in each spoonful.

The porridge hybrid of your dreams

This drømmekage-inspired grød is a simple, everyday breakfast that feels special. The base is creamy oats cooked gently in milk (or water) until they break down into a smooth porridge. A generous spoonful of vanilla yogurt adds tang and extra vanilla aroma. The finishing touch is a crunchy caramelized topping made from puffed rice, brown sugar, butter and coconut flakes. The result is a bowl that’s just sweet enough, silky and filling, with a satisfying toasted crunch and clear coconut and vanilla notes.

Crispy and crunchy topping

For the crunchy topping we chose puffed rice because it gives a light, crisp texture rather than the dense crunch of granola. Toasting the puffed rice with brown sugar, butter and coconut flakes in the oven caramelizes the sugar and coils the flavors together, creating shards of toffee-like cereal. A little oil helps achieve extra crispness, but it’s optional. This topping stores well in an airtight jar and makes the porridge feel indulgent while keeping the bowl balanced.

Ingredients you’ll need

This recipe keeps the ingredient list short and pantry-friendly. For the porridge base: rolled oats (or porridge/Scottish oats), milk or water and a pinch of salt. For the topping: puffed rice cereal (Rice Krispies or similar), unsweetened coconut flakes, brown sugar and unsalted butter. You can add a tablespoon of neutral oil or coconut oil to help crisp the topping in the oven. Finally, vanilla yogurt or plain yogurt sweetened with a touch of vanilla extract and honey or maple syrup completes the bowl. If using sweetened coconut flakes, reduce the added sugar so the topping remains balanced.

How to make our drømmekage-inspired Danish grød

Begin with the topping so it has time to cool and crisp. Gently melt butter and brown sugar together over low heat until the sugar dissolves and the mixture becomes saucy. Combine puffed rice and coconut flakes in a bowl and pour the butter-sugar mixture over them, stirring to coat evenly. Optionally, mix in a tablespoon of coconut or vegetable oil. Spread the mixture on a lined baking sheet and bake at 175–180°C (350°F) for 8–10 minutes, watching closely and stirring once or twice so it browns evenly without burning. Allow it to cool; it will crisp as it cools.

While the topping bakes, cook the porridge. Combine the oats, milk (or water) and a pinch of salt in a saucepan over medium-low heat. Stir frequently and cook until the oats reach your preferred creaminess; add extra milk or water if needed to loosen the texture. To assemble, divide the porridge between bowls, spoon over vanilla yogurt, and sprinkle generously with the caramelized puffed-rice and coconut topping. Finish with a few extra coconut flakes for garnish. Any leftover topping keeps well in an airtight container for several days and makes future breakfasts just as special.

Ingredients

Porridge

  • 100 grams rolled oats (or preferred oats)
  • 500 ml milk or water
  • Pinch of salt

Toasted Rice Cereal Topping (makes extra)

  • 15 g unsalted butter
  • 15 g brown sugar
  • 50 g puffed rice cereal
  • 40 g unsweetened coconut flakes
  • 1 tbsp coconut oil or vegetable oil (optional)

Toppings

  • 80–120 g vanilla yogurt (to taste)
  • Extra coconut flakes for garnish

Instructions

  1. For the topping, melt butter and brown sugar over low heat until sugar dissolves and the mixture looks saucy. Keep the heat low and stir so it doesn’t burn.
  2. Mix puffed rice and coconut flakes in a bowl, pour the butter-sugar sauce over them, and stir until evenly coated.
  3. Add oil if using, spread the mixture on a lined baking sheet, and bake at 175–180°C (350°F) for 8–10 minutes until golden and crisp. Stir once if browning quickly and watch carefully to avoid burning. Let cool — it will crisp as it cools.
  4. To make the porridge, combine oats, milk and a pinch of salt in a saucepan. Cook over low heat, stirring, until the oats reach your desired creaminess. Add more milk or water if it becomes too thick.
  5. Assemble bowls with porridge, a spoonful of vanilla yogurt, and a generous sprinkle of the caramelized puffed-rice topping. Finish with extra coconut flakes and serve.
  6. Store any leftover topping in an airtight container for easy breakfasts later in the week.
