Sage is the defining flavor in classic breakfast sausage, so I use it generously. Fennel adds a subtle, slightly sweet licorice note that rounds out the profile. Salt, cracked pepper, onion and garlic powders, and a pinch of red pepper flakes complete the spice mix and give the sausage depth and balance.

Ingredients

  • 1 pound ground chicken, turkey or pork
  • 1 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 1 teaspoon dried sage
  • 1/4 teaspoon fennel
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon coconut oil for cooking

Instructions

  1. Place the coconut oil in a medium frying pan over medium heat.
  2. Add the ground meat and season with salt, pepper, sage, fennel, onion powder, garlic powder, and red pepper flakes.
  3. Mix well and cook until fully cooked through, about 5–7 minutes, breaking it up as it cooks.
  4. If you prefer patties, divide the mixture into 8 patties about 1/4 inch thick and bake at 350°F (175°C) for 20 minutes.
  5. Serve immediately or use in casseroles, breakfast sandwiches, hashes, or as a side to eggs and potatoes.
