Masala Soda Recipe: Spicy Tangy Indian Summer Drink

Masala soda is a chilled, fizzy Indian summer drink made with club soda, fresh lime juice, mint and a homemade spice mix of roasted cumin, black salt and chaat masala. This quick, chatpata cooler combines sweet, tangy, salty and spicy flavors in one sip. It is non‑alcoholic, vegan and gluten‑free, and takes about five minutes to prepare.

One sip of masala soda can instantly bring back summer memories: bustling markets, street snacks and the fizzy glass a vendor hands you on a hot afternoon. The carbonation hits first, then the lime, and finally the smoky, saline cumin that gives this drink its unmistakable character.

Store‑bought masala sodas often taste flat or overly sweet. The fresh version takes five minutes and a few pantry spices, and it outshines most commercial soft drinks.

I’ve made this masala nimbu soda at home for many summers. The recipe below balances sweet, sour, salty and spicy notes without any one element overpowering the rest.

What Is Masala Soda?

In Hindi, masala means spice mix and soda means carbonated water — so masala soda is literally a spiced soda. It’s a popular North Indian summer cooler, often sold by street vendors in tall glasses over crushed ice and sometimes topped with boondi.

While pre‑made masala powders exist, making it from scratch with fresh ingredients is more refreshing and far superior in flavor. If you like bold Indian coolers, this is similar in spirit to jaljeera but faster and bubblier.

Ingredients

  • Mint leaves – Use fresh leaves for the best flavor.
  • Lime juice – Freshly squeezed lime is ideal; lemon can be used if needed.
  • Ginger – Adds a gentle peppery note. If fresh ginger isn’t available, a small pinch of dried ginger powder will work.
  • Sugar – Adjust to taste. Honey or maple syrup can substitute if preferred.
  • Club soda – Chilled soda water to top the drink and add fizz.
  • Seasonings – Chaat masala, roasted cumin powder, black salt (kala namak) and black pepper powder give the drink its distinctive tang and spice.

Note on kala namak: Indian black salt has a strong sulfur aroma when raw; that is normal and mellows in the finished drink. Look for kala namak at Indian groceries. Do not substitute regular table salt or Himalayan pink salt — the flavor differs noticeably.

How To Make Masala Soda

Step 1: Add the following to the small jar of a blender:

  • ½ cup packed, rinsed mint leaves
  • 1 teaspoon peeled and chopped ginger
  • 2 tablespoons freshly squeezed lime juice
  • ½ cup sugar
  • 1 teaspoon roasted cumin powder
  • 1 tablespoon chaat masala powder
  • ½ teaspoon black pepper powder
  • 2 teaspoons black salt (kala namak)
  • ½ cup water

Step 2: Blend until you get a smooth paste.

Step 3: Strain the mixture through a fine mesh strainer to remove fibrous bits.

Step 4: Add 4–5 tablespoons of the strained mint mixture into a tall serving glass.

Step 5: Add a few ice cubes, top with chilled club soda, and stir gently. Garnish with lime slices and mint leaves and serve immediately. Optionally top with boondi for texture. Repeat for remaining glasses.

Variations

  • Mango Masala Soda: Stir in 2 tablespoons of aam panna (raw mango concentrate) for a fruity twist.
  • Kala Khatta Soda: Add 1 tablespoon jamun (black plum) puree and a pinch more kala namak for a nostalgic flavor.
  • Cocktail Version: Add 1.5 oz vodka or gin for an adult version — the masala balances well with spirits.
  • Watermelon Masala Soda: Muddle a few watermelon cubes in the glass before adding the mixture and soda.
  • With kokum: Add kokum juice to introduce a sour, slightly floral note.
  • Flavored sodas: Swap club soda for lemon‑lime soda or cola for a different profile.

Storage Suggestions

Store the strained mint mixture in the refrigerator for up to 4 days. When ready to serve, spoon the mixture into glasses and top with soda water.

You can also freeze the mint concentrate in ice cube trays for up to 3 months. Thaw a cube and use it to make a single glass of masala soda.
