  • 2 lbs skinless boneless chicken breasts – cut into 6 pieces
  • 1 lb baby potatoes
  • 1 cup cherry tomatoes – whole
  • 5 cloves garlic – whole
  • 1 medium onion – chopped
  • 1 tbsp olive oil
  • 2 tsp turmeric
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp coriander
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spray or lightly oil a baking dish and spread the chopped onion across the bottom. In a small bowl, mix turmeric, cumin, paprika, coriander, salt, and pepper.
  2. Place the chicken pieces over the onions. Scatter potatoes, cherry tomatoes, and whole garlic cloves around the chicken. Drizzle with olive oil.
