- 2 lbs skinless boneless chicken breasts – cut into 6 pieces
- 1 lb baby potatoes
- 1 cup cherry tomatoes – whole
- 5 cloves garlic – whole
- 1 medium onion – chopped
- 1 tbsp olive oil
- 2 tsp turmeric
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp coriander
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Spray or lightly oil a baking dish and spread the chopped onion across the bottom. In a small bowl, mix turmeric, cumin, paprika, coriander, salt, and pepper.
- Place the chicken pieces over the onions. Scatter potatoes, cherry tomatoes, and whole garlic cloves around the chicken. Drizzle with olive oil.
- Rub the spice mixture evenly over all sides of the chicken and sprinkle some over the vegetables so everything is well seasoned.
- Cover the dish with foil and bake for about 30 minutes, until the chicken is cooked through and the potatoes are tender. Remove the foil and bake an additional 5 minutes to brown the top.
