Instructions

  • Preheat your oven to 350°F (175°C). Lightly spray or butter an 8x8x2-inch baking dish and set it aside while you prepare the batter.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, 3/4 cup granulated sugar, and 3 tablespoons of cocoa powder until well combined. Create a small well in the center of the dry ingredients.
  • Pour the milk, melted butter, and vanilla into the well, then stir gently until the batter is smooth and uniform. Spread this batter evenly into the prepared baking dish, smoothing the top with a spatula.
  • In a separate bowl, combine 1/2 cup granulated sugar, the brown sugar, and 4 tablespoons of cocoa powder. Sprinkle this sugar-cocoa mixture evenly over the batter in the pan.
  • Carefully pour 1 1/2 cups of very hot water over the top of the dish, covering the sprinkled sugar mixture and the batter. Do not stir — the water will sink through and form the sauce as the cobbler bakes.
