Do you like pork chops? It may sound odd to ask, since many people do—but I’ve never been their biggest fan. I’ll happily eat them, but pork tenderloin is usually my go-to when cooking pork because I find it more appealing.

My husband, on the other hand, loves pork chops and would happily have them several times a week. He doesn’t get them that often, but when I make pork chops, this cinnamon-glazed baked version is the recipe I reach for again and again.

These pork chops are especially delicious topped with cinnamon-baked apples. They’re flavorful, family-friendly, and quick to prepare—perfect for busy weeknights.

Baked Pork Chops with a Cinnamon Glaze

Ingredients

For the apples:

  • 4-6 cups peeled, chopped apples
  • 1/2 teaspoon cinnamon
  • 1 tablespoon unsalted butter (optional)
  • 1 teaspoon brown sugar (optional)

For the pork chops:

  • 4-6 pork chops (boneless or bone-in)
  • 1/2 teaspoon prepared yellow mustard (per pork chop)
  • 1 teaspoon brown sugar (per pork chop)
  • 1/8 teaspoon cinnamon (per pork chop)
  • 1/8 teaspoon dried basil (per pork chop)

Instructions

  1. Preheat the oven to 400°F.
  2. In an oven-safe dish, toss the apples with cinnamon, butter and brown sugar (if using). Place the dish in the oven to bake while you prepare the pork.
  3. Rub the pork chops with a little olive oil and season both sides with salt and pepper.
  4. Heat an oven-safe skillet over medium heat and sear one side of the pork chops for 1–2 minutes until lightly browned.
  5. Flip the chops and sear the other side for about a minute, then remove the skillet from the heat.
  6. Spread mustard and brown sugar on each pork chop, using the back of a spoon to coat them evenly.
  7. Sprinkle the cinnamon and dried basil over the chops and gently spread to distribute the seasoning.
  8. Transfer the skillet to the oven and bake for 10–15 minutes, or until the internal temperature reaches 145°F when measured in the thickest part.
  9. Let the pork rest for 5 minutes before serving. The baked apples should finish around the same time as the pork.

Notes

I’ve used both boneless and bone-in chops with good results. Cooking time depends on thickness: thinner chops will finish sooner, while thick chops (about 1½ inches) may take closer to 15 minutes. To avoid overcooking, check doneness with an instant-read thermometer. Pork is safe at 145°F, then allow it to rest five minutes before slicing. The glaze amounts are per chop, which makes it easy to scale the recipe up or down.
