This Paleo Breakfast Sausage is full of flavor and comes together in minutes. It’s simple, wholesome, and delicious—quick to make and perfect to keep on hand as a breakfast staple.

Making sausage at home lets you control the ingredients and customize the seasonings. With a handful of spices and about 10 minutes of prep and cook time, you can have flavorful breakfast sausage ready to enjoy.

Breakfast Sausage Seasonings
Sage is the defining flavor in classic breakfast sausage, so I use it generously. Fennel adds a subtle, slightly sweet licorice note that rounds out the profile. Salt, cracked pepper, onion and garlic powders, and a pinch of red pepper flakes complete the spice mix and give the sausage depth and balance.

If you eat a lot of eggs, this sausage is an excellent way to change up breakfast. Use it in a casserole, form patties for a sandwich, add it to a hash, or simply serve it alongside eggs and potatoes.
Chicken, Turkey or Pork
Ground turkey is convenient and commonly available, but ground chicken or pork both work well. Choose the protein that fits your taste and dietary preferences.

This sausage adapts to many dishes: bake it into eggs, crumble it into a skillet hash, shape it into patties, or serve it on the side. It’s quick to make and delicious—once you try it, you’ll likely keep making it.
