This Crock Pot Garlic Herb Mashed Potatoes recipe is one of those easy, make-ahead sides. It’s perfect for Thanksgiving but just as welcome on a weeknight. The slow cooker makes the potatoes tender and allows the garlic and herbs to infuse gently for great flavor.
Ingredients
- Red potatoes (about 2 pounds, washed — no need to peel)
- 4 tablespoons butter
- 1/2 cup sour cream (or plain Greek yogurt)
- 1 tablespoon minced garlic
- 1 tablespoon finely chopped fresh parsley (or 2 teaspoons dried parsley flakes)
- 1/2 teaspoon basil (dried or fresh)
- 1/4 teaspoon dried oregano
- 2 teaspoons salt (adjust to taste)
- 1 teaspoon black pepper
- 1/4 cup milk (more if needed for desired consistency)
