Ingredients
Serves 1
- 1 tbsp olive oil, for frying
- 4 rashers smoked streaky bacon
- 2 thick slices of your favourite bread (I used tiger bread)
- 1 tbsp mayonnaise
- 1 small egg
Essential Equipment
- Large frying pan with a lid
- Circle cookie cutter (mine was 6cm — use a size that fits your bread)
Instructions
- Heat a large frying pan over medium heat and add the oil. Once hot, add the bacon and fry until crisp and golden, turning occasionally (about 5–10 minutes). Remove and keep warm.
- Use the cookie cutter to remove a circle from the center of one bread slice.
- Spread mayonnaise on one side of both slices of bread.
- With the pan still at medium, place both slices mayo-side down and fry until golden on the bottom.
- Flip the bread over, then crack the egg into the hole in the bread slice. A little leakage is fine — you can trim any stray egg later and tuck it into the sandwich.
- Cover the pan with a lid and cook for a few minutes until the white is set but the yolk remains runny, or cook to your preference.
- Remove the bread from the pan. Assemble the sandwich by placing the fried bread, top with the bacon, add any extra sauce or toppings you like, and finish with the egg-in-a-hole slice. Serve immediately.
