Ingredients and Substitutions

- Olive oil: A tablespoon to prevent sticking and help brown the sausage.
- Peppers: I like a mix of red, green, yellow, and orange bell peppers for color and balanced sweetness.
- Yellow onion: Two small or one large; red onion also works.
- Tomatoes: One 15 oz can diced tomatoes. You can substitute a small can of tomato sauce or 1 tbsp tomato paste plus ½ cup chicken broth.
- Sausage: One pound of sweet or mild Italian sausage. The fennel and seasonings in Italian sausage add great flavor.
- Italian seasoning: About 1 tablespoon for extra herb flavor.
- Salt and black pepper: To taste.
How To Make One Pot Sausage And Peppers
Heat a large pot or skillet over medium heat and add the olive oil. Slice the sausage links in half lengthwise or cut into chunks, then add to the hot pot.
Cook the sausage 1–2 minutes per side, turning so each side browns. While the sausage browns, slice the bell peppers and onion into strips.



Top the browned sausage with the sliced peppers and onions, then pour in the diced tomatoes with their juice. Sprinkle the Italian seasoning and season with salt and pepper. Stir gently to combine.
Cover the pot, reduce heat to medium-low, and simmer for 20 minutes until the peppers and onions are tender and the flavors have melded.
Remove the lid, garnish with chopped fresh parsley if desired, and serve immediately.
