This Crock Pot Garlic Herb Mashed Potatoes recipe is one of those easy, make-ahead sides. It’s perfect for Thanksgiving but just as welcome on a weeknight. The slow cooker makes the potatoes tender and allows the garlic and herbs to infuse gently for great flavor.

Ingredients

  • Red potatoes (about 2 pounds, washed — no need to peel)
  • 4 tablespoons butter
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1 tablespoon minced garlic
  • 1 tablespoon finely chopped fresh parsley (or 2 teaspoons dried parsley flakes)
  • 1/2 teaspoon basil (dried or fresh)
  • 1/4 teaspoon dried oregano
  • 2 teaspoons salt (adjust to taste)
  • 1 teaspoon black pepper
  • 1/4 cup milk (more if needed for desired consistency)

Equipment needed

  • Crockpot — a model with a digital timer that switches to warm is helpful for hands-off cooking.
  • Hand mixer or potato masher for mashing.
  • Serving dish

Tips

  • Wash the red potatoes and leave the skins on for texture and nutrients; cut larger potatoes into even pieces so they cook evenly.
  • Cook on high for 2–3 hours or on low for 5–6 hours until potatoes are fork-tender.
  • After adding butter and dairy, let the butter melt for a couple of minutes before mashing for a smoother texture.
  • Adjust milk to reach your preferred creaminess and taste for salt and pepper at the end.

Ingredients

  • 2 pounds red potatoes washed (you don’t need to peel them)
  • 4 tablespoons Butter
  • ½ Cup Sour Cream or plain Greek yogurt

Instructions

  • Add the washed potatoes to a lightly greased slow cooker. Cover and cook on high for 2–3 hours or on low for 5–6 hours, until the potatoes are fork-tender.
  • When the potatoes are tender, add the butter, sour cream, minced garlic, parsley, basil, oregano, salt, pepper, and milk. Let the butter melt for a couple of minutes.
  • Mash the potatoes with a hand mixer or potato masher until smooth or to your preferred texture. Taste and adjust seasoning. Serve warm.
