Ingredients

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1/2 cup (100 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 3/4 cups (210 g) oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (130 g) chocolate chips
  • Sea salt flakes (optional)

Instructions

  • Using a hand mixer or stand mixer with a paddle attachment, cream together the butter, brown sugar, and granulated sugar on high speed until pale and fluffy.
  • Scrape the bowl, then add the egg and vanilla and beat until combined.
  • Add oat flour, baking soda, and salt. Mix on low just until combined; avoid overmixing.
  • Fold in most of the chocolate chips, reserving a few to press on top before baking.
  • Chill the dough for at least 30 minutes or up to 3 days in the refrigerator.
  • Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  • Scoop rounded portions of dough (about 1.5 tablespoons or a 1.6-inch/4 cm scoop) onto the prepared sheets, leaving about 2 inches between each cookie.
  • Press a few reserved chocolate chips onto the top of each dough ball for presentation.
  • Bake for 9–11 minutes, until edges are set and centers still look slightly soft.
  • Right after removing from the oven, sprinkle sea salt flakes on top if desired. Let the cookies rest on the pan for 5 minutes before transferring to a cooling rack to cool completely.
