I’ve been eating a lot of sandwiches lately, and this Three Cheese Grilled Cheese with Tomato deserves to be shared. It’s become one of my favorites — I made it several times the week I discovered it. This sandwich is perfect for summer when tomatoes and basil are at their peak. If you grow your own tomatoes and basil, like I do, it’s a great way to use up that bounty. The combination of a garlic-and-herb cheese spread with melted mozzarella and provolone, plus fresh tomato and basil, gives a classic grilled cheese an elevated, flavorful twist.

Liven up your grilled cheese with this Three Cheese Grilled Cheese with Tomato. Boursin, mozzarella and provolone combine with tomato and basil for the ultimate grilled cheese sandwich.
Ingredients
- 4 slices Crusty country-style bread
- 1 tablespoon extra virgin olive oil
- 3 tablespoons garlic-and-herb cheese spread such as Boursin
- 2 ounces thinly sliced mozzarella
- 2 ounces thinly sliced provolone
- 4 thin slices of ripe tomato
- 6 large fresh basil leaves
Instructions

Preheat a panini press or a skillet over medium heat.

Place the bread slices on a work surface. Brush one side of each slice with the olive oil. Turn the slices over and spread the un-oiled sides evenly with the garlic-and-herb cheese.

On two of the bread slices, layer one-fourth of the mozzarella and one-fourth of the provolone, then add two tomato slices and three basil leaves to each. Top with the remaining mozzarella and provolone.

Place the remaining two bread slices on top, herbed-cheese sides down, and gently press to compact the sandwiches.

If using a panini press, place the sandwiches inside, close the lid, and cook for 3–5 minutes until the bread is golden and the cheese is melted. If using a skillet, cook the sandwiches on one side until golden, then flip and cook until the cheese melts. Slice each sandwich diagonally and serve immediately.
