Ingredients
Bleu Cheese Dressing
- 1/3 cup plus 1 tbsp sour cream
- 1/3 cup plus 1 tbsp buttermilk
- 4 1/2 tsp red wine vinegar
- 1/4 cup finely minced shallot
- 3/4 tsp salt
- 4 oz bleu cheese crumbles
Salad
- 1 head iceberg lettuce
- 3 hard-boiled eggs, peeled and diced
- 8 strips bacon, cooked and crumbled
- green onions, sliced
- tomatoes, sliced
- additional bleu cheese crumbles for garnish

In a bowl, gently combine the dressing ingredients until smooth. Cover and refrigerate while you prepare the salad.

Remove the core from the iceberg lettuce by loosening it with a firm knock on the countertop or by cutting it out. Rinse the interior, drain, and then cut the head into 4 or 8 wedges depending on desired serving size.

Arrange wedges on a serving platter or individual plates. Spoon bleu cheese dressing over each wedge, then top with diced egg, crumbled bacon, sliced tomatoes, and green onions. Finish with extra bleu cheese crumbles.
Notes
